Decaffeinated with ethyl acetate derived from sugarcane, in Colombia, close to where it was grown — which keeps the green coffee out of a shipping container for an extra two months and shows up in the cup as sweetness that survived the process. We roast it a shade darker than the caffeinated equivalent because decaf beans take on colour faster than they take on flavour.
